If you have lots of muffin tins they work best!

This recipe makes a huge batch, and fills a baking pan plus 2 twelve cup muffin pans (about 40 rolls) though we always love to eat them all up. They freeze well and reheat well in microwave. What you need... Strong hands for kneading dough and inspiration for a big project! Muffin pans and or casserole dishes or baking pans (preferably nonstick) Smile Rolling pin (Or a smooth round strong cup works) A wooden spoon A small and Large bowl plastic (saran) wrap Cheese grater, or buy grated cheese. And an OVEN.

Two pounds of thin sliced Ham Two or more cups shredded cheddar cheese Two or more cups shredded mozzarella cheese You can use both kinds of cheeses or Just one kind _ A three pack of dry yeast 9 cups flour 1 cup wheat flour One TABLEspoon baking powder One cup sugar 6 eggs (5 of them ROOM TEMPERATURE or warmed in hot tap water One cup of milk One cup of water 3/4 cups of butter PLUS... 1/2 cup of butter Directions...

In a pan or microwavable bowl heat 3/4 cup of BUTTER, One cup of MILK, One cup of WATER just until butter is melted. Now find a separate large mixing bowl and mix together, one cup WHEAT FLOUR, two cups of the WHITE FLOUR, one TABLESPOON BAKING POWDER, three packages of YEAST, and One cup of SUGAR. Now add the Five eggs, warmed milk, butter and water mixture to the dry flour ingredients and stir well with a wooden spoon. Continue stirring in as much of the remaining flour as you can, now empty the dough mixture onto a clean counter top that has been sprinkled with some flour. With your hands work in the rest of the flour. Roll and press the dough into a ball. With the palms of your hands press over and over (kneading the dough) for about 10 minutes until the dough is soft, smooth, and a little bit moist. If its two sticky sprinkle and spread more flour to the surface of the ball and your hands. Don't add two much extra flour Just enough to keep kneading and pressing the dough until its soft. Now cut the dough in half. Wrap one half in plastic wrap and place in refrigerator. Sprinkle and smooth some flour onto the counter top. Roll out the dough to about 18 X 13 Inch RECTANGLE. Spread 1/4 cup softened butter onto dough. Spread out half the ham and 1/2 of the cheese on dough. Tightly roll up the dough starting at the short end . Repeat with second half of dough. Cut rolls about one inch thick and place into greased pans. Cover loosely in plastic wrap and allow rolls to double in size. About 1 hour. Don't forget!!! Right before baking brush tops of rolls with a beaten egg! Optional- You can wrap dough rolls in plastic and keep refrigerated up to 24 hours before cooking.
Bake at 350 * for 20 minutes |
